We are seeking a dynamic and experienced Food & Beverage Manager to join a leading resort and casino property. This is an exciting opportunity for a bilingual professional fluent in English and Mandarin, with a strong track record in large-scale hospitality operations.

Key Responsibilities

  • Collaborate with the Director of F&B to develop budgets, monitor costs, and analyse monthly Profit & Loss statements to ensure financial targets are met.
  • Recruit, train, and manage high-performing F&B teams, ensuring staffing levels and team coordination support operational excellence.
  • Oversee all dining outlets, ensuring exceptional quality in food, beverage, and service standards, including wine, cocktail, and mocktail presentations.
  • Conduct daily inspections of outlets to maintain presentation, creativity, and compliance with hygiene and FSMS standards.
  • Support the creation, implementation, and maintenance of F&B policies, procedures, and operational manuals.
  • Facilitate clear communication with team members, sharing updates, goals, and operational information to enhance efficiency.
  • Maintain comprehensive records of purchases, schedules, and reports, tracking inventory turnover to optimise resources and minimise waste.
  • Lead initiatives to elevate guest experience while maintaining cost control and operational efficiency.
  • Undertake any additional tasks as assigned by senior management.


Candidate Profile

Bachelor’s Degree in Hospitality Management or equivalent.

Minimum 10 years of experience in front-of-house F&B operations at resort, hotel, or casino properties.

Proven expertise in F&B management or restaurant general management, with a strong understanding of budgeting, cost control, and P&L analysis.

Demonstrated leadership in recruiting, training, and developing staff to maintain high service standards.

Deep knowledge of food safety, health regulations, and industry best practices.

Skilled in managing large-scale F&B operations with strategic oversight to deliver exceptional guest experiences.

Experienced with POS systems and restaurant management software.

Proficient in Microsoft Office (Excel, PowerPoint, Word, Outlook).

Fluent in English and Mandarin.

This is a senior-level role with a focus on leadership, operational excellence, and delivering world-class guest experiences.
