A prestigious winery restaurant located in the beautiful Mornington Peninsula is seeking an experienced and passionate Executive Chef to lead the culinary direction of this established dining destination.

This is an exceptional opportunity for a talented chef who has experience within Hatted restaurants (1 or 2 Hat standards) and is looking for a long-term career opportunity with a respected hospitality group.

About the Role

Reporting to senior management, you will oversee all aspects of the kitchen operation, leading a talented culinary team while delivering an exceptional dining experience focused on quality, creativity and consistency.

You will have the opportunity to influence menus, showcase premium local produce and continue to build the restaurant’s reputation as one of the region’s leading culinary destinations.

Key Responsibilities

• Lead and inspire the kitchen team across daily operations.
• Develop innovative menus showcasing seasonal and local produce.
• Maintain exceptional food quality and presentation standards.
• Manage kitchen systems, procedures and operational efficiencies.
• Drive consistency across service delivery.
• Mentor and develop culinary talent.
• Manage food costs, budgets and supplier relationships.
• Ensure compliance with food safety and workplace standards.

You will bring:

Previous Executive Chef or Senior Sous Chef experience.

Experience working within 1 or 2 Hat restaurants or premium dining environments.

Strong leadership and team development skills.

A passion for quality produce and modern Australian cuisine.

Excellent organisational and communication skills.
